The Stills
Our copper pot stills have been specifically designed for the
production of single malt whisky. We are Australia's largest producer
of Single Malt Whisky and are working 24 hours a day 5 days a week to
fill our bond store. We have plans to increase our production capacity
within the next 12 months.
The Ingredients
All whisky relies on three key ingredients to produce a quality
product. Water, Yeast and the Grain Bill. Our
Products will use different ingredients to produce the appropriate
style and character of whisky we are making. Just like beer and wine,
the origin of your source products will have a significant impact on
the quality and characteristic of the end product. Fortunately,
Australia is renowned for its quality grains, fresh, clean water and
clean air - which allow us to make and mature quality whisky. But
ingredients are only part of the process. We have invested
significantly in an R&D program to evaluate how our ingredients can
best be crafted to acheive a new-make spirit that is best suited for
our climate and character development in our barrels.
The Barrels
Up to 80% of the character in a whisky comes from the barrel used to
mature the spirit. When whisky is made, it enters the barrel a clear
spirit. The finely crafted spirit then interacts with the oak to
extract colour and flavour characteristics. This period of maturation
can vary depending on climate, the type and quality of spirit matured
and the size of the barrel.
When making single malt whisky, most distilleries choose second or
third fill barrels. That is, they have already been filled two or three
times with a port, sherry or bourbon product before being used to
mature whisky. It adds an extra dimension to the characteristics of the
malt whisky and gives the distiller the opportunity to create uniquely
finished expressions of whisky. Unlike single malts, bourbon whiskies
from the United States must be matured in new charred American oak
barrels.
Victoria Valley Distillery uses a combination of barrel sizes and
different sources of barrels to create it's unique expression.
